We light everything on FIRE..
“The Paso Robles Fire Department is Here!” It’s true. We light drinks on fire. The PRFD was recently called to respond to “complaints,” and our boys in red thoroughly “investigated” and determined that the shredded coconut in our Paso Colada, and the Trader Vic’s 151 Rum in many of our specialty cocktails is perfectly “safe” and ready for drinking. WE LOVE THOSE GUYS!
At Craft Paso we offer worldwide specialty rum, tequila, and whiskey tours. We have specialty rums, tequila, and whiskey blends from
around the world and you can taste them here and mix them into your
favorite drinks. Try a "flight" or straight shots to savor the true

We are also a Brew Pub. Our brew master Jeremy Fleming is cranking out fantastic craft beers such as Craft Paso Belgium Witt, Bad Beat Pilsner, and Head’s Up Session IPA Red Rye and Smoked Porter. We also are lucky to have his high caliber talent and you will like the results. Be sure to ask our bar staff about the latest offerings. We brew different recipes frequently and you will be impressed with the artisan skills in every batch.
Here are the details of our latest offerings: Smoked Porter: ABV ~ 5.6%, F.G. 1.012, IBU ~ 40
Our smoked porter is an American Robust Porter. This porter has a prominent smoked malt character with undertones of chocolate and roasted coffee layered over a spicy warmth on the back of the palette. Subtle complexity combined with premium cherry-wood smoked malt and organic dark crystal malts to form a beautiful brew forged by smoke, sugar, and fire. Enjoy!
Session IPA: ABV ~ 4.7%, F.G. 1.008, IBU ~ 50
Our version of a Session IPA is actually a well bittered American Style Pale Ale made with a big portion of a hop varietal called Citra. This brew is light bodied, crisp, and it finishes with a bright bitterness on the palette. The large proportions of Citra and Simcoe in the dry hop brings forth aromas reminiscent of fresh citrus fruit fresh and resinous pine. Enjoy!
Citrus Wheat: ABV ~ 5.1%, F.G. 1.010, IBU ~ 14
Our American Style Citrus wheat infused with locally sourced orange peel added at multiple points throughout the brewing process. We use high quality pilsner malt and organic malted wheat to create a crisp and hazy wheat beer. Additions of Citra hops throughout the boil supports prominent citrus notes over the entire palette. Light and refreshing, perfect for any day. Enjoy!
Imperial Rye IPA: ABV ~ 8.5%, F.G. 1.008, IBU ~ 90
This big Imperial IPA is for all the hop fanatics out there. We start with two things in mind; Bitter and Strong. In order to make this brew unique and complex we decided to use 7 different types of hops, as well two separate dry hop sessions. The primary aroma and flavor characters are derived from Amarillo and Citra hops. When combined these hops create a big dank grass and citrus character. Enjoy!
German Style Pilsner: ABV ~ 5.0%, F.G. 1.008, IBU ~ 35
Our pilsner is the based on a recipe hailing from the world’s oldest breweries in Germany. This fantastic brewed to be Crisp and bitter, with a dry to medium-dry finish. Just like a proper pilsner we boil twice as long to ensure a prominent biscuit-like malt character to compliment the bright hop characteristics. Definitely one of the best German Pilsners on the central coast. Enjoy!
We are the only late-night open kitchen in Paso Robles. Don’t be shy. Our kitchen is generally open any time between 5 pm and midnight. When everyone is closed come see us!
